At La Chaumière, the story of wine is told by Ferenc Moczi, our young head sommelier who is passionate to the core, as in love with wine as he is with people, and whose words flow like nectar. Here is a closer look at an undeniable talent who likes to play the counter-card to create the ultimate pairing.
There's the cuisine of chef Césari - Jura-style, honest and surprising - and then there are the eye-catching bottles of Ferenc Moczi. Of Hungarian origin, the 26-year-old sommelier has studied and sampled everything France has to offer, adding ever more references to his olfactory repertoire. It has to be said that with 600 wines on the menu, his sensory memory contains a few well-stocked gigabytes. With an inexhaustible thirst for learning and a passion for wine, Ferenc delivers his suggestions with a natural warmth that his customers love. "We're here to suggest, not impose. I want to make wine easy and accessible and, above all, give people pleasure." Behind the wine, there are hard-working men and women with whom Ferenc has forged a touchingly intimate relationship. As a result the wine menu at La Chaumière is brimming with finely-articulated wines, all made with respect for the craft and its artisans. Among the young sommelier's favourites are the fruity, subtle and sexy reds from Jura-born Jean-Baptiste Menigoz from Domaine des Bottes Rouges. Then we journey to Alsace with its refined, intensely fresh Rieslings and delightfully sweet Muscats from Domaine Valentin Zusslin. And why not take your palate on a tour of Burgundy, to the vineyards of Domaine Rollin, where you'll discover sustainable viticulture and elegant nectars of exceptional minerality.
In his pairings, Ferenc continues the surprise initiated by chef Césari's brilliant creativity. With a blue Stilton, he goes against the grain by pairing it with Stéphane Tissot's Jura Indigène, whose fine bubbles and elegant bitterness on the finish carry the punchiness of this pungent British cheese. With a lightly seasoned, unadorned foie gras, he pairs a well-structured, tannic Cahors to awaken the taste buds.
Ferenc's knowledge and daring are a source of inspiration to the very last drop. At La Chaumière, wine is definitely a matter of taste, showcasing the local terroir, while offering well-considered departures from outside the region to accompany the chef's recipes and create the perfect pairing.
